One final thing, bring in basic goods (Grain/Fish/Iron Ore - anything cheap to buy) to the city of your workshop/caravans. Workshops can be profitable depending on the prosperity of the city and the villages around it. Make sure you only build in cities with high prosperity, and base your workshop type off of what inputs you get from the villages. For example, a city with high prosperity and 2 or 3 grain-producing villages is going to have very successful breweries. The workshops seem to ramp up when prosperity of a town increases.
